It's Recipe Redux time. Tacos were this month's theme. I developed this taco pizza recipe and my kids (well two out of three) devoured it!

Taco Pizza

Makes one 14 inch pizza

  • Whole wheat pizza dough (I used this recipe but a store bought version works too)
  • 1 pound ground beef
  • 1 can black beans, rinsed and drained
  • 1 can corn, drained
  • 2 cups shredded cheese (I used a fiesta blend)
  • 3 Tbsp or more to taste taco seasoning (I used a salt free homemade blend)
  • 3 - 6 green onions chopped
  • 2 Tbsp chopped fresh cilantro

For the sauce:

  • 1 cup refried beans
  • 1/2 salsa

Directions:

Preheat oven to 450 degrees. Brown ground beef in a skillet and drain well. Add the black beans, corn, and taco seasoning to the skillet and heat. Roll out pizza dough. Combine refried beans and salsa in small bowl and spread over pizza dough. Top with cheese and about 2 cups of ground beef/corn/black bean mixture. (Freeze the remaining ground beef mix for a future taco pizza). Bake for 10 - 12 minutes until cheese is melted and dough begins to brown. Topped the baked pizza with fresh cilantro and green onions. Slice and serve.

Other toppings to consider (I just knew my kids would refuse if I added any of these):

  • black olives
  • mushrooms
  • sauteed bell peppers and onions
  • jalapenos
  • sour cream
  • shredded lettuce
  • chopped tomoatoes
