It's Recipe Redux time! This month the challenge was to create a crunchy snack recipe. This cracker snack is hardly a recipe but is delicious and contains a green light food (fruit or vegetable) which I am always trying to eat more of and feed more to my family.
Cranberry and Cream Cheese Crackers
Serves 1 (multiply recipe to serve more)
- 7 whole grain crackers (I used Crunchmaster Multiseed Crackers)
- 7 tsp cream cheese
- 2 Tbsp dried cranberries
- 1 Tbsp fresh parsley finely chopped
Spread about 1 tsp cream cheese on each cracker. Add a few dried cranberries and sprinkle to top with fresh chopped parsley. Enjoy!
