We tried lots of new things last month. Here are a few comments

Slow Cooker Asian Beef didn't work out for us. It was really dried out and too salty. The amount of slow cooker time was hard for me. I had to remember to put it in midday. I like slow cooker meals I can start in the morning and leave until dinner.

The Ham and Swiss Pinwheels didn't go over has well as I'd  hoped. I used the Trader's Joe's brand crescents. They had less additives than the Pillsbury ones, but still were a red light food so I probably won't make them again since my family didn't love them. I'd rather make a Stromboli that is whole grain and they enjoy more.

Double Chocolate Banana Zucchini bread was really good! We gobbled it up!

I liked the Cranberry Almond Energy Bites, but I was the only one. Everyone else refused them.

This month soccer continues making Wednesday night difficult. We leave home before dinner and no one is hungry yet but don't get home until bedtime so we've been eating a bowl of cereal when we get home and snacking on fruit on the way.

We also have a Disney World vacation this month so I didn't have to plan meals for those days! Super excited. My kids are finding out about the trip at their combined surprise birthday party this weekend!!!

On the menu this month:

Garlic Mushroom Quinoa - I hope this tastes as good as it looks.

Tropical Breakfast Farro - I am exploring some ancient grains. This will be my first taste of farro.

This pancake recipe from Super Healthy Kids is exactly how my son prefers pancakes. I've started letting the kids pick the meal one night per month. My son picked pancakes.

These Quinoa Black Bean Burgers are really good. My kids usually eat them. Otherwise they get the back up food.

Parmesan Eggs are really good. My family prefers that I "scramble" (whisk) the eggs.
